Cơm Tấm Thịt Nướng & Chả Trứng (Broken Rice With Grilled Pork & Meatloaf)

PORK:
2 lbs pork (sliced) - thịt nạc dăm
Finely minced garlic and shallot
1/2 tsp salt
1/2 tsp pepper
1 tsp sate (sate ăn phở)
1 Tbsp chili garlic sauce (tương ớt con gà)
1 Tbsp olive oil
1 Tbsp Maggi soy sauce
1 Tbsp oyster sauce
1 Tbsp hoisin sauce
4 Tbsp honey
2 Tbsp 5 spices wine

MEATLOAF:
1 lb of ground pork
1 small diced onion
Minced garlic & shallot 
1/2 teaspoon of salt
1 teaspoon of pepper
1 teaspoon of chicken powder 
1 teaspoon of soy sauce
2 teaspoons of fish sauce 
1 Tablespoon of sugar
1 Tablespoon of oyster sauce
1/2 cup of chopped dried shrimps
1/2 cup of chopped black woodear mushroom (nấm mèo)
2 eggs

6 salted egg yolks

4 egg yolks (put on top of the meatloaf)

1) Combine all the ingredients (except the 6 salted egg yolks and the 4 egg yolks).
2) Divide and insert the 6 salted egg yolks in the mixture.
3) Steam it over medium heat for about 50 mins.
4) Whisk the 4 egg yolks together and pour it on top of the meatloaf.
5) Continue to steam it for about 10 more mins UNCOVERED.
