Bún Chả Hà Nội

1 lb ground pork (same ingredients when marinate thinly cut pork)
1 Tablespoon minced garlic
2 Tablespoons minced shallots
1 teaspoon chicken powder
1 Tablespoons sugar
3 Tablespoons honey
3 teaspoons fish sauce
1 Tablespoon oyster sauce
1 Tablespoon cracked pepper
1 Tablespoon cooking wine

DIPPING SAUCE:
1 part sugar
1 part fish sauce
6 part water

Minced garlic and chili (ONLY put in the dipping sauce just right before the serving time)
