KOREAN BBQ KALBI

BBQ KALBI:
3 lbs of beef ribs
2 BOSC pears
1 medium onion
10 cloves of garlic
1 Tablespoon of ginger
1/3 cup of soy sauce
1/3 cup of cooking wine (or water)
1/4 cup of honey 
1 Tablespoon of ground black pepper
2 Tablespoons of sesame oil

SPROUT side dish

  • 1 pound semi-cooked sprouts
  • 2 cloves minced garlic
  • 2 teaspoons fish sauce
  • 1 Tablespoon sesame oil
  • 1 Tablespoon mirin
  • 1 teaspoon sesame seeds
  • 2 green chopped onions

WATERCRESS or SPINACH side dish:
2 bunches of semi-cooked watercress/spinach
1 Tablespoon sesame oil
1 Tablespoon mirin
2 teaspoons fish sauce

POTATO side dish:
2 medium potatoes (chop into cubes)
1/2 medium onion (chop into cubes)
1/2 cups of water
2 cloves of minced garlic
2 Tablespoons of soy sauce
1 Tablespoon of corn syrup
1 Tablespoon of sugar
1 Tablespoon of sesame oil
1 teaspoon of pepper
Olive oil
Toasted sesame seeds

-Add olive oil to a heated pan. Put the potato into the pan.
-Add minced garlic and sauté it until the potato looks a little translucent.
-Add the onion and keep stirring for a few minutes.
-Add water, soy sauce, corn syrup and sugar.
-Cover with lid and simmer it over medium heat until the potatoes well cooked.
-Uncover the pan, add sesame oil and pepper, continue simmer until the liquid is almost evaporated.

SEASONING TOFU side dish:
10 pieces of fried tofu
1 clove of minced garlic
1 chopped of scallion (white part)
1 teaspoon of pepper flakes
1 teaspoon of honey
1 teaspoon of sesame oil
1 Tablespoon of soy sauce
1 chopped of scallion (green part) to garnish

CARAMELIZED TOFU side dish:
10 pieces of fried tofu
1 clove of minced garlic
1 Tablespoon of soy sauce
1 Tablespoon of corn syrup
Sesame seeds (to garnish)

KIMCHI side dish:
10 lbs of napa cabbage
1 cup of salt
Porridge: 3 cups of water + 1/2 cup of sweet rice flour + 1/4 cup of sugar.
Paste: 1 cup of minced onion + 1 cup of minced garlic + 2 Tablespoons of minced ginger.
1 cup of fish sauce
2 cups of hot pepper flakes
6 bunches of scallions
Julienned carrot

***Total salting time is 1-1/2 hours (Remember to turn the cabbage over every 30 mins to salt them evenly). Rinse the cabbage throughly in cold water at least 3 times to wash off the salt.
