Fish Paste

Part 1 ingredients:
2 lbs (tilapia) fillet
2 Tablespoons sugar
3 Tablespoons fish sauce
2 Tablespoons vegetable oil
½ teaspoon salt
1/2 bun green onion (finely chopped)

Part 2 ingredients:
½ teaspoon ground pepper
½ teaspoon baking powder
2 Tablespoons tapioca flour

-Cut the fillet into small cubes. 
-Mix in "part 1 ingredients".
-Put it in the freezer for about 2 hours (for it to be extremely chilled).
-Grind it using mixer (remember DO NOT over grind it). If after this step and the fish is less chill, then put it back to the freezer again before continue the next step. 
-Add in the "part 2 ingredients". Put it in the standing mixer with paddle attachment and let it gradually mix on slow speed, then raise to medium speed, and continue mixing for 5 minutes, or until the mixture is well combined.
